Hillbilly Breakfast

William Ward - July 23, 2018

I sure love a Hillbilly Breakfast,
Made with skilled and loving hands,
Like the kind I have had in the past,
Fried up in big iron pans.

Maybe a sausage patty or two,
Also a few strips of bacon,
Sounds like that might do,
While in the oven biscuits are baking.

Peel some potatoes shred them on the grate,
Throw them in the skillet with salt and pepper ground,
You know they are gonna be the best ya ever ate,
When you get them fried up all crunchy and brown.

Using the grease left from the meat,
Add some flour, salt, sugar and milk,
Cook it up into gravy so sweet,
Then stir until smooth as silk.

Crack some eggs into the pan,
Fry them up to your liking,
Slide them out according to plan,
Add some tomatoes if you like for slicing.

Put a couple biscuits on your plate,
Pour the gravy over all,
Add the rest of your items and create,
The best breakfast you ever saw!
